Pumpkin "Dolores" - Cucurbita moschata.
One of the most popular "Hokkaido" pumpkin varieties. A medium-vigour plant with trailing vines.
Orange skin and deep yellow flesh that is tasty and juicy. Fruits are small, ribbed, pear-shaped, about 1.5 kg.
Rich in B vitamins and provitamins, as well as calcium and phosphorus. Noted for high vitamin C content.
Recommended for soups, baking, roasting, and stuffing.

* How to freeze fresh pumpkin?
Frozen pumpkin cubes are perfect for pumpkin soups or side dishes... 
To freeze pumpkin, first remove the seeds and fibrous parts, then cut into cubes.
Spread the cubes on a tray lined with parchment paper.
Place in the freezer for 20 minutes, then take out, pack the cubes into separate bags, and return to the freezer.
Freezing pumpkin purée.
Pumpkin purée is very practical: it can be used in many dishes. Add it to soups or use it for baking.
Purée can be frozen in small bags or plastic cups. If using freezer bags, remove excess air, then seal tightly. Place sealed bags on a tray or board and freeze.
If using cups, fill them leaving 2–3 cm to the rim. Gently shake to remove air bubbles so it freezes evenly. Cover with cling film and place in the freezer.
Which containers are best?
Purée can be frozen in bags, plastic containers, or small jars (for example, baby food jars). Choose packaging based on your needs. Bags save space compared to containers and jars.
Don’t forget to weigh it!
Before freezing purée or raw pumpkin cubes, it’s best to weigh them and label the bag or jar with the weight. This makes cooking easier because you know exactly how much you need for a recipe.
You can portion it out: 250 g, 500 g, etc. Weight matters especially for baking. 
Rinse the seeds well, dry them, lightly salt, then dry in the oven at +180°C for about 30 minutes.
You can also roast the seeds in a pan with a little oil, stirring constantly. Eat them as a snack or add to salads and porridge.
Pumpkin seeds are valuable, so never throw them away after cleaning!
Defrosting.
For many dishes such as stews, soups, or risotto, pumpkin cubes do not need to be thawed first. If you have thawed pumpkin, do not refreeze it, or it will lose its taste and texture.
